OSCAR GARCIA

Thanks to his Spanish roots and his family kitchen, Oscar inherited his taste for cooking and the true flavours of the simple recipes of his childhood.

Born in Toulouse to a French mother and a Spanish father, he trained in both the kitchen and the dining room with Dominique Toulousy and Franck Putelat. He was awarded a Michelin star at Maison d’Uzès in 2014. His passion for local products led to the opening of “Bonbonne”, a local shop in Toulouse, where regulars from his native neighbourhood enjoy simple, yet daring cooking that showcases his local cuisine.

In 2020, his desire to create 360° experiences took shape when he took over a hotel with his partner, Julie.

The couple are still committed to welcoming their customers “as if they were at home”, and today they have transformed the former Altillac manor house into a destination for gastronomic experiences.

The product, a solfeggio

Every morning at dawn, Oscar visits his vegetable garden and orchard, located less than 1,500 metres from his restaurant, in search of inspiration for his “Cueillette” daily special. The music of nature and the chorus of his growers, all of whom he knows personally, dictate his cuisine.

The Chef extracts a flavour from each ingredient, selected for its gustatory properties, to enhance it through a play of textures. Like a culinary composer, he creates, assembles and associates three to five notes of flavour in each of his dishes, to offer his guests original works of art, perfectly mastered and in perfect harmony.

To get as close as possible to the products, to tell their story, the seasons, the people, through associations of character, which surprise by their power but please by their flavours with a strong memory.
